Chenin on schists in Anjou, rather dry or sweet ?
How to solve the equation gathering all these factors, nice terroir for the botrytis/seeking for wine of terroirs/ great dry potential/economic balance of the domains ?
Is the answer to be found in the osmosis/cryogenics/chaptalization/respectful approach of the terroir/climatic variations/demand for authentic wines ?
Here is my point of view in the middle of all those debates.
